While I was pregnant with twins my husband was adamant about how much protein I ate in a day. He would stress protein, protein, protein! With two babies inside me and a still very active lifestyle I really did need to up my protein game. I made it a routine that at the start of each week I would make these easy egg white protein muffins. Because chicken sounded terrible (I am NOT a vegetarian), I found that eggs were my best solution to getting the right amount protein and energy for the day. Don't get me wrong, egg whites are a great source of energy and protein, but if you're looking for the total punch, and don't mind a little fat in your diet, go for the whole egg in your muffin.
What’s so great about these muffins is that they take 30 minutes start to finish to make and bake. They’re extremely healthy, and they give you a great protein power punch to tame those mid-day hunger strikes. I would whip up a batch every Sunday night and have them readily on hand for the week. These can be made as plain egg only muffins, or jazz them up with your favorite veggies and meats. Either way these delicious muffins will become a staple in your refrigerator!!
