Wake Up With a Bang Blueberry Muffins

To eat a muffin, or not to eat a muffin, that is the question…

Most people think they’re making the right decision by starting off the day with a muffin opposed to a sugary donut. Unfortunately, the bakery muffins for sale are hardly any healthier. Many muffins you buy from your local bakery and supermarket are packed with empty calories and tons and tons of sugar. However, once in a while when you dig through the junk you find a gem, or in this case a delicious and good for you muffin.

I finally found a muffin both mom and kiddos can agree with!! Made with only natural sugars and plenty of protein to get the body game ready to tackle the day, these blueberry muffins will definitely start the day off with a BANG!


Ingredients:

2 1/2 cups Oatmeal

2 ripe bananas

2 eggs

1 Tbsp. vanilla

1/4 cup honey

1 cup plain no-fat greek yogurt

2 Tbsp. ground flax

2 tsp. baking powder

1 tsp. baking soda

1 cup blueberries


Directions:

-Heat oven to 350 degrees F.

-Combine all the ingredients in a food processor (or strong blender). Blend until the ingredients make a creamy batter. Once smooth use a spoon to stir in the blueberries.

-Line a muffin pan with liners and fill to 3⁄4 of the way full with batter.

-After the filling has been mixed into each muffin tin slide the tray into the warm oven and bake for 30 minutes or until a toothpick comes out clean.

* Serves: Makes 6 large, or 12 small muffins.
